These days the focus is on quality and reduced environmental impact. Ever since its foundation, Caviro has supplemented its core business of wine production with agri-food by-products and energy from the recovery, recycling and transformation of these by-products. This cuts down on process waste and reduces the environmental impact of its operations to almost zero.

Sourced from the north-east of Italy the grapes to make this wine are machine harvested, destemmed and traditionally pressed. Fermentation takes place in 300 – 1600hl tanks at 18 °C for 8-10 days. The wine is then stored in stainless steel tanks for 3-4 months before bottling.

Pinot Grigio is hugely popular for its delicate, easy-drinking style. These wines are known for their light body and subtle aromas of almond blossom, pear, peach and lemon. This style of wine has less intensity than Sauvignon Blanc and is enjoyed for its delicate freshness.
