A rich and full bodied red wine, dark cherries and blackberries notes together with flavours of ripe blackcurrants.
Intensely red in colour with a violet hue there are typical scents of Sicilian Syrah and intense hints of blackberry and cherry. On the palate, it has well-defined notes of red berries with a perfect fusion of spices, black pepper, liquorice and cloves. Alcohol: 13%.
Founded in 1966, Caviro's winegrowers' cooperative processes the grapes produced by its winegrower partners, who in turn receive advice and guidance on the best types of grape to produce for the various markets. These days the focus is on quality and reduced environmental impact. Ever since its foundation, Caviro has supplemented its core business of wine production with agri-food by-products and energy from the recovery, recycling and transformation of these by-products. This cuts down on process waste and reduces the environmental impact of its operations to almost zero.

The grapes used to make this wine are harvested by hand from the hills of Petrosino, Sicily. Vinification involves destemming and traditional pressing and the grapes are in contact with the skins for 8-14 days. Fermentation takes place in 400hl tanks at 25-26°c for 14 days. The wine undergoes malolactic fermentation with selected bacteria, 20% is then stored in barrels for 3-6 months, with the remainder in stainless steel tanks.
Tasting Note
Syrah produces rich, dark wines that are known for their peppery and black fruit aromas. The grippy tannins make Syrah a brilliant pairing option for red meats.
